Watermelon bean paste is a traditional delicacy in Henan Province. When watermelons are on the market in large quantities, almost every household will make it. The bean paste tastes particularly good, is easy to preserve and is rich in nutrition. So how should this watermelon paste be made? I will write down the steps of making it in a while, and you will learn it after reading it. 1. Cook beans After washing the prepared soybeans with clean water, put them in a pot, add clean water and cook them. After they are cooked, take them out and put them in a sieve to control the water. Then add an appropriate amount of flour and mix well so that the surface of each soybean is even and coated with a thin layer of flour. This will facilitate subsequent fermentation. 2. Fermentation After the soybeans are cooked, they can be fermented directly. It is best to spread newspapers on a wood board or other breathable material, spread the soybeans on it, and place them in a high temperature environment to maintain a hot and humid environment. You can cover the soybeans with a towel blanket or a thick towel, which is conducive to the fermentation of the soybeans. After summer, the soybeans will grow white hair, and after a day or two the white hair will turn green, and the soybeans have been fermented. 3. Modulation Seasoning is an important step in making watermelon fermented beans. When preparing, you should follow the ratio of one pound of soybeans to three or four ounces of salt and five pounds of watermelon pulp. After seasoning, you should also add appropriate amounts of pepper, star anise and edible salt. After mixing, cover the mouth of the bean basin with a layer of cotton gauze, and then expose it to the sun. Stir it once every morning, turn it back into the house at night and dry it. You can smell the fragrance of the fermented beans after half a month. 4. Stir-fried beans After you smell the aroma of the watermelon bean paste, you need to stir-fry it. Heat oil in a wok, add an appropriate amount of peppercorns and star anise, stir-fry until fragrant, then take it out and pour in the prepared watermelon bean paste and add a small amount of water, stir well, then add an appropriate amount of chopped pepper, chopped green onion and minced ginger. After the water inside is dried up, turn off the heat and take it out. |
