Steps for stewing potatoes with beans

Potatoes stewed with beans sounds like a strange combination, but it is really delicious. Let's try it:

Ingredients for Potato Stew

500g of string beans/green beans

One potato

A few slices of ginger

2 tablespoons soybean paste

Half spoon of soy sauce

2 tablespoons soy sauce

A pinch of salt

1 tbsp sugar

A little oil

A little five-spice chicken essence

How to cook potatoes and beans

Wash the beans and remove the tendons. If they are too long, break them into two pieces.

Wash and peel the potatoes, cut them in half, take out half of them and cut them in half again, then cut them into slices half a centimeter thick.

Heat a pan with a little oil, sprinkle some five-spice powder, add ginger slices when it is 50% hot, and add beans when the aroma comes out;

Try to spread the beans out in the pan so they are evenly heated;

When all beans are fried and turn green, push them to the sides of the pan, leaving the potatoes in the middle (adding them too early will make them stick to the pan), and continue to stir-fry over medium heat.

When the potatoes are fried until they are transparent in the middle, add the seasoning:

2 spoons of soybean paste; 2 spoons of light soy sauce; a little bit of salt (if there is sauce, you must use less salt); half a spoon of dark soy sauce; 1 spoon of sugar.

After adding the seasoning, continue to stir-fry to allow all the seasoning to be evenly mixed with the vegetable.

Level the vegetables in the pot to form a flat surface, then pour in water until the water covers the vegetables.

Bring water to a boil over high heat, cover the pot, and simmer over medium heat;

During this period, do not turn over the food in the pot, let it stew on its own.

When the water is almost cooked, lift the lid and turn to high heat to reduce the sauce, then turn off the heat;

While it’s still hot, add a little chicken essence and it’s done.

1. It is especially suitable for patients with diabetes, kidney deficiency, frequent urination, spermatorrhea and some gynecological functional diseases.

2. However, people with qi stagnation and constipation should be cautious when eating cowpeas.
