Material

400g beef brisket , 300g potatoes , 1 scallion, 1 piece of ginger, 4 cloves of garlic, 1 piece of cinnamon , 3 pieces of tangerine peel , 1 star anise , soybean paste, rock sugar , dark soy sauce , salt

1. Wash the beef brisket and cut into small pieces, wash the green onions and cut into small sections, wash the ginger and chop it, peel and chop the garlic

2. Put the processed onion, ginger, garlic, cinnamon, tangerine peel and star anise into the seasoning bag

3. Put the cut beef brisket and seasoning packet into the purple clay pot, pour in cold water to cover the beef, boil at high speed, skim off the foam, turn to low speed, and stew for about 2 hours.

4. While the beef is cooking, peel the potatoes, cut them into dice and set aside.

5. After the beef is stewed until soft, serve and set aside the beef broth and soup dumplings.

6. Pour proper amount of oil into the pot and heat it up, add rock sugar and stir-fry with a spatula. At this time, adjust the heat to medium-low. When the rock sugar melts and begins to turn golden, adjust the heat to minimum and keep stirring the syrup until the rock sugar is completely dissolved. When brown-red syrup appears in the pot, add the beef and a little soy sauce, stir-fry continuously until the color is evenly distributed.

7. Add potato cubes, stir-fry, pour in beef broth and seasoning packet, bring to a boil over high heat, add a tablespoon of soybean paste, stir evenly, turn to low heat, simmer until potatoes are cooked, sprinkle with a little salt, and serve.
