Asparagus recipe

Asparagus is a vegetable that people often eat in daily life, but how much do you know about how to cook asparagus ?

Asparagus knowledge introduction

Asparagus belongs to the Liliaceae family and is a perennial root plant.

The edible part of asparagus is its young stems. They grow out of underground stems in spring. The stems are tender and plump, with round apical buds and dense scales. They are harvested before they emerge from the ground and are white and tender, called white asparagus. The young stems turn green when exposed to light, called green asparagus.

White asparagus is mostly canned, while green asparagus is eaten fresh.

Asparagus is a precious vegetable with a delicate texture and rich nutrition. However, asparagus is not the tender shoots of reeds, but is named because of its shape like spring bamboo shoots.

Asparagus is native to the Mediterranean coast, Asia Minor, the Caucasus of the former Soviet Union, and the floodplains of the Volga River and the Irtysh River. There are also wild species in Siberia and along the central Heilongjiang River. It is cultivated in small quantities in various parts of my country.

Asparagus is popular in countries around the world because of its white and tender flesh, rich flavor, high protein, fat-free, and fresh taste. It is often seen as a dish at high-end banquets in Europe and the United States.

Quality requirements for asparagus: fresh and tender whole asparagus, 12 to 16 cm long, 1.2 to 3.8 cm thick, white in color, with tight tips, no hollowness, no cracks, and no sand or mud.

A brief introduction to the medical benefits of asparagus

Asparagus is rich in asparagine. Modern medicine has proven that asparagine has many special physiological effects on the human body. It can promote urination and has certain effects on heart disease, edema, nephritis, gout, and urine sand. It also has a sedative effect.

Aspartic acid and its salts can improve physical strength and eliminate fatigue, and can be used to treat the following diseases: general fatigue, loss of appetite, protein metabolism disorders, liver dysfunction (acute or chronic hepatitis, cirrhosis, incomplete bile secretion), hangover, nicotine poisoning, heart disease (heart failure, asthma, palpitations, edema, oppression), arteriosclerosis, neuralgia, neuritis, pregnancy poisoning, hyperammonemia, hypotension, glandular dyscrasia, rash, dermatitis, eye fatigue, hearing loss and tuberculosis. Aspartic acid can also be used as a nutritional supplement.

In addition, asparagus contains asparagus, mannan, choline and arginine, which are effective for hypertensive disorders (high blood pressure, cerebral hemorrhage, etc.).

Asparaginase, which acts as a catalyst in the reaction of asparagine plus water to generate asparagine and ammonia, has been recognized as a treatment for leukemia and has anti-cancer effects.

Asparagus is not only delicious, but also has many nutritional values. It is a vegetable that is very worth trying.

Ingredients: fresh shrimp, asparagus, salt, cooking wine, starch, ginger, green onion

Method 1. Wash the shrimp and freeze them in the refrigerator for half an hour, then remove the shell and devein the shrimp (leave the last part of the shrimp shell at the tail).

2. Marinate the peeled shrimp with a little salt, cooking wine and starch, put it in the refrigerator for ten minutes and take it out for later use.

3. Soak and wash the asparagus, peel off the old skin and cut into sections diagonally.

4. Cut ginger into strips and green onions into sections.

5. Heat the wok, add oil, stir-fry the shredded ginger and scallion until fragrant, then remove the shredded ginger and scallion and discard.

6. Put the shrimp into the oil pan and fry until it changes color, add the asparagus and stir-fry for a while, add a little salt to taste and serve.

Tips:

1. Many people ask me how to peel live shrimp conveniently. My method is to buy live shrimp and freeze them in the refrigerator for half an hour before peeling them. At this time, you will find that the shrimp shells are much easier to peel than when the shrimps are alive and kicking.

2. Many people say that it is difficult to make asparagus tasty. In fact, it is very simple. Except for the tender part of the asparagus head, it is best to remove the old skin of the lower part. Also, the cutting method should be diagonal, so that it is tender and easy to taste.
