1. Dried Shrimp and Winter Melon

[Prepare ingredients] Winter melon, dried shrimps, vegetable oil, chopped green onion, minced ginger, water starch, cooking wine, salt, and MSG.

[Preparation] Peel, remove the flesh and seeds of winter melon, wash and slice, marinate with a little salt for about 5 minutes, drain and set aside. Pour oil into a pot and heat it up, sauté chopped green onion and minced ginger. Add 1 tablespoon of water, cooking wine, salt and dried shrimps, bring to a boil, add winter melon slices, turn to medium heat and simmer, add MSG after the winter melon is seasoned, pour in water starch to thicken.

2. Braised Winter Melon

[Prepare ingredients] Winter melon, shiitake mushrooms, ginger, garlic, onion segments, peppercorns, small chili peppers, soy sauce, starch, cooking wine, and chicken essence.

[Preparation] Wash the mushrooms and set aside. Wash and peel the winter melon and cut it into large rectangular pieces. Make small square cuts on the skin side. Apply a little starch on the side of the winter melon where the cuts are made. Heat a wok with a little oil. Add the winter melon and fry until half cooked. Remove from heat. Add a little more oil to the wok, add the peppercorns, minced ginger, and minced garlic, stir-fry the winter melon, add the mushrooms, pour in soy sauce, a little cooking wine, hot peppers, and half a bowl of water, cover the pot and simmer until the winter melon is cooked through. Thicken with starch to collect the sauce, add scallion segments and chicken essence to taste and serve.

3. Winter melon stewed pork ribs

[Prepare ingredients] Appropriate amounts of winter melon, pork ribs, ginger, aniseed, salt, pepper and MSG.

[Preparation] Peel and cut the winter melon into pieces, blanch the ribs in boiling water for 5 minutes, remove and wash with clean water to remove the blood foam. Boil the ribs, ginger, star anise and appropriate amount of water on high heat, then simmer for about 60 minutes on low heat, add the winter melon and simmer for about 10 minutes, remove the ginger and star anise, add salt and pepper, simmer for another 10 minutes, add MSG and serve.

4. Steamed meat pie with pickled winter melon and salted egg

This is a very simple dish. It is made for the Mid-Autumn Festival.

Ingredients: a 300g minced meat, b 3 tablespoons of homemade pickled winter melon (slightly with juice, about 1/2 teaspoon). If pickled winter melon is not available, you can use yuzu char instead, c 4 homemade raw salted egg yolks (if the pickled winter melon is not very salty, add some soy sauce. You can also add a little MSG or sugar according to your preference)

Method: 1. Mix minced meat a, winter melon b and a salted egg yolk and knead evenly.

2. Divide into three portions and shape into round shapes. Place on a plate and flatten. Press a salted egg yolk on top. Steam over high heat until cooked. About 15 minutes. It is ready to eat.

5. Homemade pickled winter melon

Ingredients: 20 jin of winter melon, 1.5 jin of sugar, 1.5 jin of salt, 1.5 jin of bean koji (commonly known as bean [rice white]), rice wine enough to cover the amount of winter melon

Method: 1. Peel and deseed the winter melon. Apply salt. Sunbathe for 1 day.

2. Take a clean jar that has been scalded with hot water and air-dried. Place a layer of fermented bean curd and a layer of winter melon. Arrange the jars. Pour rice wine over them. The wine should cover the winter melon. (You can add some chili peppers.) Marinate until the winter melon is translucent. This takes about 2 months. (Some books say 15 days is enough.)

PS. I bought the fermented bean curd at a wholesale food store. (The rice was packed together with the fermented bean curd.)
