Ingredients and methods of fried sponge gourd with eggs

Fried loofah with eggs is one of the home-cooked dishes. It is simple to make and delicious. Let’s learn how to make it!

Material

One loofah, 2 eggs, a few dried wolfberries

1. Beat the eggs and soak the dried wolfberries in water

2. Add a small spoonful of water to the egg liquid and stir well. After the pan is hot and oil is poured in, pour the egg liquid in and fry the eggs until 80% cooked.

3. Wash the loofah, peel it and cut it into dices

4. Heat the pan again, add a little oil, stir-fry the loofah and softened wolfberries for about half a minute, then pour in the eggs and stir well. Add a thin starch before serving, turn off the heat, add salt and mix well.

5. It only takes about one minute from putting the loofah into the pot, adding the eggs, to taking it out of the pot.

Kind tips

After pouring the eggs on the loofah, you need to control the heat and time. High heat will easily burn the eggs and the loofah will not be easy to cook; low heat for a long time will make the eggs hard and not tender. Therefore, it is better to use low heat for 3-5 minutes, until the eggs are lumpy and there is no mushy state when you stir with a spatula.

It is good for women to eat more loofah in autumn. Loofah is sweet and flat in nature. It has the effects of clearing away heat and cooling blood, detoxifying and relieving constipation, dispelling wind and resolving phlegm, moisturizing skin and beautifying, unblocking meridians, promoting blood circulation, and promoting lactation. Its collaterals, seeds, vines, flowers, and leaves can all be used as medicine. Loofah is often used to treat chest and rib pain and breast pain and swelling caused by qi and blood stagnation. Loofah grains can be used to treat irregular menstruation, constant back pain, laxative, food accumulation and jaundice. Loofah leaves can be taken internally to clear away heat and relieve fever, and externally to reduce inflammation and kill bacteria, and treat prickly heat, carbuncle, and sore. The remaining part after burning loofah is called loofah frost. Grind it evenly and set aside. Take 3-6 grams each time and take it with salt soup or rice wine twice a day. It is effective for uterine bleeding or hemorrhage. Fry loofah seeds or loofah leaves until they are black and grind them into powder. Take it with salt water to treat menorrhagia. Burn 1 old loofah to ash, grind into powder, take 9 grams each time, wash with salt water to treat menorrhagia. Take 1 dried loofah, decoct in water, take twice a day to treat dysmenorrhea.
