Introduction to hairy crabs

The Chinese mitten crab is an economic crab, also known as river crab, hairy crab, clear water crab, and hairy crab. It is a long-standing delicacy in China. Its claws are used for feeding and fighting enemies, and the inner and outer edges of the palms are densely covered with velvet, hence the name of the mitten crab. It is an omnivorous animal, and fish, shrimp, snails, clams, worms, earthworms, insects and their larvae can all be used as animal bait for hairy crabs.

Crabs contain more vitamin A, which helps the keratinization of the skin; they can also supplement calcium for rickets in children and osteoporosis in the elderly. They are widely distributed in lakes along the north and south coasts of China, with the Yangtze River system producing the most crabs and tasting extremely delicious. Among them, the most famous is the Gucheng Lake hairy crab, which has always been known as the best crab and is recognized as a well-known Chinese trademark by the State Administration for Industry and Commerce. Other well-known ones include the Taihu Lake hairy crab, the Yangcheng Lake hairy crab, and the Changdang Lake hairy crab.

How to clean the tied hairy crabs

1. First, prepare a basin of warm water at about 45℃, which should be warm enough to hold your hand (if it is too hot, the crab's legs will fall off). Put the crabs belly up in the water one by one, and wait for them to turn over. When they turn over, they will have drunk the hot water and fainted. The advantage of this is that the crabs will just faint and will not pinch your fingers, and it will not affect the crab's deliciousness.

2. Take out a toothbrush, grab both sides of the hairy crab, and use the toothbrush to vigorously clean the back, abdomen and mouth.

3. Then clean the sides of the hairy crab and the base of its feet and claws.

4. The next step is the most critical one. Grab the claws (use the handle of a toothbrush to lift the joint of the claws from the bottom up, and use the thumb and index finger to grab the claws along the base of the claws. For some ferocious crabs, you can press down the claws or knock them a few times first), open the abdominal cover, and squeeze out the excrement from the inside to the outside in the middle.

5. Finally, clean the dirt inside the belly cover and the crab claws of the hairy crab. The hairy crab is now cleaned.
