How to make delicious fried snails

1. Stir-fried snails with chili sauce

Step 1: 500 grams of snails, 50 grams of green peppers, appropriate amount of dried chili peppers, oil, salt, pepper, sweet bean sauce, garlic cloves, and ginger.

Step 2: Soak the snails in clean water first and filter out the mud and sand completely.

Step 3: Boil water in a pot, put the snails into the boiling water and blanch them. Take them out after all the snails are opened.

Step 4: Add a little oil to the wok and first use chili peppers, ginger slices and peppercorns to stir-fry the wok.

Step 5: Put the snails into the pot, add a small amount of water and stir-fry.

Step 6: Add minced garlic, salt and green pepper and stir-fry over high heat until combined.

2. Fried snails with homemade sauce

Step 1: You need to prepare 1000 grams of clams, 1 chili, appropriate amount of oyster sauce, appropriate amount of water starch, salt, soy sauce, and appropriate amount of onion and ginger.

Step 2: Soak the snails in clean water for three hours in advance to allow the snails to slowly spit out all the mud and sand.

Step 3: Heat the pan and add oil. Stir-fry the scallions, ginger and chilies in advance, then add the drained clams.

Step 4: Add white wine or cooking wine to the pot. There may be flames after a small amount is added, but just cover the lid.

Step 5: After the cooking wine, add onion, ginger, garlic, salt, oyster sauce and soy sauce, and add corn starch.

Step 6: Cover the pot and simmer over low heat for 3 minutes, then drizzle with sesame oil and sprinkle with chives.
