Eggplant recipes

Today I will introduce to you several common ways to cook eggplant, you can collect them well:

1. Chrysanthemum Eggplant

Production:

⑴ Remove the stems of the eggplant, wash and peel it, cut it into 4 cm high cubes, then make a cross-shaped cut on the cross section of the cubes, sprinkle a small amount of salt to marinate, then coat it evenly with flour and set aside. Wash the carrots and cut them into chopstick-like dices.

⑵ Pour oil into a spoon and heat it to 70% to 80% hot. Put in the eggplant flowers and fry them. Pour out the oil and place them on a plate.

⑶ Heat some oil in a spoon, stir-fry the tomato sauce, add chopped green onion, ginger, soup, sugar, carrot cubes, salt and MSG and bring to a boil. Thicken with wet starch, add cooking oil, heat and pour over the fried eggplant eyes.

2. Stuffed Eggplant

Production:

⑴ Remove the stems of the eggplant, wash and peel it, cut it into 3 cm long round segments, and use a knife to dig out the middle part of the eggplant segment.

⑵ Add chopped green onion, ginger, salt, MSG and eggs to the meat filling, mix well, spread it into the hollowed-out eggplant, sprinkle with chopped ham, chopped mushrooms and chopped coriander, steam for 8 minutes, take out when cooked and place on a plate.

⑶Put a little base oil in the spoon, add soup, salt and MSG, bring to a boil, then use wet starch to make a running starch and pour it on the eggplant cubes.

3. Spicy Eggplant Dumplings

Production:

⑴ Remove the stems of the eggplants, clean and peel them, cut them in half and cut them into pieces. Cut the Sichuan pepper into sections.

⑵ Add salt, MSG, chopped green onion, chopped ginger and half an egg to the meat filling and mix well. Put it into the eggplant sandwich and dip it in noodles for later use.

⑶ Use the remaining eggs, beat them into a bowl to make egg liquid, then add flour to make egg paste.

⑷Put some oil in a spoon and heat it up to 50% to 60% hot. Put the eggplant slices and dip them in egg batter into the spoon and fry until they turn golden brown. Pour out the oil and drain.

⑸Put some oil in a spoon, heat it up, add scallion and ginger, stir-fry Sichuan pepper, pour in the mixed juice and stir-fry until cooked, then add the fried eggplant dumplings, stir evenly, add red oil, and serve.

4. Pot-collapsed eggplant box

Production:

⑴ Remove the stems of the eggplants, clean and peel them, and cut them into thin slices. Cut the carrots and cucumbers into diamond-shaped slices, and cut the coriander into sections.

⑵ Add salt, MSG and half an egg to the meat filling, mix well, put it into the eggplant sandwich and dip it in the noodles. Beat the remaining eggs into a bowl and stir into egg liquid.

⑶Put oil in a spoon and heat it up to 30% to 40% boiled. Put the eggplant sandwich with noodles and dip it in egg liquid into the spoon. Fry both sides until golden brown. Add chopped green onion, ginger, soup, salt, MSG, sugar and vinegar. Fry over low heat until the soup is dry. Drizzle with sesame oil and serve on a plate.

5. Crispy Eggplant Roll

Production:

⑴ Remove the stems of the eggplant, wash and peel it, cut it into 5 cm segments, then use a knife to cut it into slices of even thickness, and marinate it with a little salt.

⑵ Add salt, MSG, chopped green onion, chopped ginger and eggs to the minced meat, mix well, then put it into the marinated eggplant slices, roll it up and coat it with flour.

⑶ Put the crispy flour into a bowl, add water and stir into a moderate paste, put oil in a spoon, and when it is half cooked, dip the eggplant rolls one by one in the crispy flour paste and fry them into golden brown. Remove from the oil, serve on a plate and sprinkle with pepper and salt.

6. Garlic Eggplant Dip

【Production】:

⑴ When choosing eggplants, choose long eggplants.

⑵ To steam the eggplant, peel the eggplant and cut it into long strips. During the steaming process, poke the eggplant frequently with chopsticks. When the chopsticks are inserted to the bottom, it means the eggplant is steamed (it will be done in about eight minutes).

⑶ Mix the garlic paste, put it in a large container, stir it with chopsticks, and stir it in one direction when stirring the eggplant paste. This will not damage the eggplant fibers. The eggplant paste will be more delicious and more nutritious. The finer the garlic is cut, the better, so that the garlic and eggplant paste can be fully blended.

⑷ Add seasoning. In order to make the eggplant puree taste good, first add salt, light soy sauce, pepper, vinegar and other seasonings, and stir evenly; add the remaining garlic paste to the stirred eggplant puree, sprinkle some crushed peanuts and chopped green onions on it, and pour hot oil on it.
