Ingredients and methods of eggplant buns

I like to eat big buns made of eggplant and meat the most. I can eat two or three at a time. So today I will introduce the specific method to you:

Eggplant bun ingredients

250g diced meat 2 long eggplants

500g flour 2 tablespoons soy sauce

1 tablespoon dark soy sauce 1 tablespoon oyster sauce

Pepper powder and salt

2 tablespoons oil chopped green onion

1 piece of ginger star anise

A small piece of cinnamon bark 280g water

Yeast 4g

How to make eggplant buns

1. Make the filling first: add 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, some pepper powder and some salt to the diced meat and marinate for more than 1 hour

2. Peel and dice the eggplant, heat oil in a pan, add ginger slices, star anise, and cinnamon, remove from the pan, add chopped green onions and sauté until fragrant, pour in the diced eggplant, stir-fry over low heat until the eggplant becomes soft, serve and let cool for later use

3. Mix the marinated diced meat with the fried diced meat, and add appropriate amount of salt and sesame oil according to your taste to make the stuffing.

4. Make the dough: Dissolve the yeast in water and add it to the flour to make a dough that is neither too soft nor too hard. Cover with plastic wrap and place in a warm place to ferment until it doubles in size. After fermentation, take it out and knead it thoroughly. If the dough is not big enough, you can divide it into two parts.

5. Roll them into long strips and cut them into large packages

6. Take a dough, roll it into a thin dough around the edges and slightly thicker in the middle, put the filling in, and pinch it as shown in the picture

7. Put the buns in the steamer and let them rise for 20 minutes. Boil water in a pot, put the buns in the steamer and cook on high heat for 15-20 minutes.

Tips

After frying the eggplant, mix it with the meat and steam it to make it more flavorful. The steamed buns contain a very rich soup. Eating the buns with mashed garlic is extremely delicious.
