1. Fried eggplant with tomatoes

This is a veritable marriage of close relatives, one is a tomato, the other is an eggplant. Peel the tomato and dice it, peel the eggplant and dice it, put oil in the pan and fry the eggplant until it is shiny and cooked, then add chopped green onion and tomato, fry for a few times, then add salt, white vinegar, white sugar, five-spice powder, and cook until the tomato is rotten.

2. Steamed Eggplant

Steam the eggplant until it is soft, but not too soft. I haven't calculated how many minutes it takes. Some people like it soft, while others like it with a slightly hard core. It depends on personal preference. However, if it is too soft and releases too much water, it will not look good. So when steaming it, do not put it on a plate, but place it directly on the lotus seeds so that the water will flow through.

Make a sauce with chopped onion, ginger, garlic, chili oil, sesame oil, salt, soy sauce, vinegar and sugar, and eat it with dip.

3. There is eggplant in it

Haha, this is just for show. At first glance, it seems to be mainly meatballs and beans, but since there is eggplant in it, I will include it in this post.

Fry the eggplant, beans and meatballs in oil, pour out and drain the oil, leaving a little oil in the pan, add onion, ginger and garlic and stir-fry until fragrant, add some boiling water or broth, some cooking wine and soy sauce, put the fried food in, add salt, sugar and pepper, and thicken it.

This can also be called "Three Fresh Vegetables from the Ground", which consists of eggplant and beans grown in the ground, and meatballs made from pigs running on the ground, so it is called "Three Fresh Vegetables from the Ground".

4. Stir-fried eggplant with hot peppers

Cut them all into shreds, then add oil and stir-fry the eggplant. When the eggplant is soft, add the onion, ginger, garlic, chili pepper, cooking wine, a little soy sauce, sugar, salt and pepper, and stir-fry for a few times.

Eggplant tastes better when it is oily. If you don't want to eat something so greasy, then you can prepare a flat non-stick pan and put a little oil in it. The eggplant will absorb all the oil when you first fry it, but don't worry, the eggplant will spit out the oil after it becomes soft after frying for a while. But having said that, it still smells better when it is oily.
