Stir-fried eggplant with hot peppersCut them all into shreds, then add oil and stir-fry the eggplant. When the eggplant is soft, add the onion, ginger, garlic, chili pepper, cooking wine, a little soy sauce, sugar, salt and pepper, and stir-fry for a few times. Eggplant tastes better when it is oily. If you don't want to eat something so greasy, then you can prepare a flat non-stick pan and put a little oil in it. The eggplant will absorb all the oil when you first fry it, but don't worry, the eggplant will spit out the oil after it becomes soft after frying for a while.
