Ingredients: 1 loofah, 200g shrimp, 1 egg, half a red pepper, half a green pepper, ginger (appropriate amount), 3 cloves of garlic

Marinade: salt (1/3 tablespoon), Haitian Iron Fortified Gold Label Soy Sauce (1/2 tablespoon)

Seasoning: salt (1/3 tablespoon), wine (1/2 tablespoon)

Preparation method:

1 Use a knife to gently scrape off the loofah skin and cut it into strips for later use; smash the ginger and garlic, wash the green and red peppers, and cut them into shreds for later use.

2 Clean the shrimps, squeeze out the moisture, and marinate with 1/3 tablespoon of salt and 1/2 tablespoon of light soy sauce for 10 minutes.

3 Take an empty bowl, beat an egg into egg liquid, pour into the wok and fry until 60% cooked, set aside.

4 Reheat the oil in a pan, sauté ginger and garlic, add in shrimps and stir-fry for a dozen seconds, add 1/2 tablespoon of cooking wine to remove the fishy smell of seafood, and serve in a bowl.

5 Add the loofah and stir-fry for 1 minute. During this time, you can add some water and cook it for a while.

6 Pour in shrimp, eggs, green and red peppers, season with 1/3 tablespoon of salt, stir-fry for a while and serve.

Delicious tips:

1. When buying loofah, you should choose loofahs with uniform thickness and firm feel. The loofah should not be too soft or too hard: if it is too soft, it means it has been stored for a long time, and if it is too hard, it means that the loofah is not moist enough and not fresh enough.

2. Before marinating the shrimp, you need to pick out the shrimp intestines with a toothpick so that the dish will not have a fishy smell.
