Method 1: Cold Amaranth

Ingredients: Amaranth, garlic, salt, soy sauce, sesame oil, MSG, sesame seeds

Steps:

1. Wash the amaranth, cut it in the middle with a knife and set aside, and mash the garlic into garlic paste and set aside.

2. Add a small amount of salt and oil to boiling water, blanch the amaranth, then take it out and soak it in cold water.

3 Take a small bowl and mix the minced garlic, light soy sauce, salt, sesame oil and MSG into a sauce.

4. Take out the amaranth, drain the water, pour in the sauce, sprinkle with sesame seeds, stir well and serve.

Method 2: Garlic Amaranth

Raw material preparation:

Amaranth, garlic, oil, and salt to taste

Steps:

1. Wash and pick the amaranth, put it in a basket to drain the moisture, and cut it into two sections; peel the garlic, cut part of it into slices, and mash the rest into garlic paste.

2. Add a small amount of oil to the pan, add the garlic slices when the oil is hot, wait until the aroma comes out, then add the amaranth and stir-fry over high heat for about 5 minutes. Add a small amount of salt and minced garlic and stir-fry.

Method 3: Amaranth tofu rolled with two eggs

Ingredients: Amaranth, tofu, two large salted eggs, 1 preserved egg, garlic, ginger, water

Steps:

1. Wash and clean the amaranth, then cut into sections; wash the tofu and cut into pieces.

2. Wash the century eggs and salted eggs, peel them and cut them into small pieces.

3. Peel the garlic and cut into thin slices; cut the ginger into slices.

4. Put cooking oil in the pot, add ginger and garlic slices after the oil is hot, stir-fry until fragrant, then add appropriate amount of water.

5. After the water boils, put the tofu, preserved eggs and salted eggs into the water, cover the pot and cook for 5 minutes

6. Add amaranth and cook for about one minute, then add salt to taste.
