1. Wash the chicken offal, especially the gizzards, rub them with salt, cut them into thin slices, and marinate them with sugar, salt, cooking wine and a little light soy sauce; cut the ginger into thin strips, wash the rice, and wash the chopped green onions and chop them.

2. Put water in the pot, bring to a boil, and pour in the rice. Bring to a boil, pour in the chicken giblets and ginger strips, bring to a boil again, then turn to low heat and simmer for half an hour, stirring constantly with a spoon in a clockwise direction.
