Mushroom Chicken Soup Method:

1. Soak the mushrooms in water for 20 minutes, then remove the stems and cut in half.

2. The bamboo shoots were recommended to me by my boss. They are called Maojian bamboo shoots. You can also use other bamboo shoots instead. Don't be too rigid. Today's main dishes are mushrooms and chicken. Soak the bamboo shoots and then cut them into sections.

3. Wash the chicken thighs and cut them into pieces. It doesn’t matter if the pieces are a little bigger.

4. Bring water to a boil in a pot, blanch the fish for 3 to 4 minutes to remove the blood, then remove from the water.

5. Add cold water to the pot, add the bloodless chicken pieces, some ginger slices and some white wine.

6. When the water in the pot boils, pour in the chopped mushrooms and add some salt.

7. When the water in the pot boils again, add the chopped Xunzi.

8. Bring to a boil over high heat, then simmer over low heat for 30 to 40 minutes. When the chicken is tender, it is ready to be served. If it is not salty enough, add some salt. Just use a spoon to taste it. Add some chopped green onions and it is ready to be served.
