Crayfish, also known as freshwater crayfish and swamp red lobster, belongs to the Arthropoda class Crustacea family. It has a sturdy body, cylindrical and slightly flat, with a body length of generally 8 to 14 cm and a weight of 20 to 60 grams. It is native to America.

Lobster: There are more than 400 species of lobsters in the world. North America is the continent with the most lobsters. There are two families (Crayfish Family and Crayfish Family), 12 genera and more than 300 species distributed in North America. Most of the more than 300 lobsters have low economic value. The lobsters with large individuals (each tail can reach 50-80g) and important economic value are Procambams, Cambarus, Pacifastacus and Orconectes. Among them, Procambarus clarkii accounts for 70-80% of the total lobster production.

Lobsters are large and cylindrical in shape, and are the largest shrimps in the world. They have a strong and thick carapace, and the cephalothorax is slightly flattened laterally. The front lateral margins, except for the family of Langoustines, are not fused with the preoral plate, and the lateral margins are not fused with the thoracic plastron and the base of the thoracic limbs. The neck groove is obvious. The first antenna is short and small, with two whips. The second antenna has more developed scales. The three pairs of maxillopods all have external limbs. The walking legs are all single-branched, and the first three pairs are chelate-like, of which the first pair is particularly strong and thick, so they are also called chelate shrimps. The last two pairs of walking legs are simple and claw-like. The gills are filamentous gills.

Lobsters like to live in shelters such as water plants, branches, and rock crevices. They hide during the day and come out at night, and do not like strong light. Under normal conditions, they hide in deep water or in shelters during the day and rarely move. They start to move in the evening after the sun sets, and often gather in shallow water to crawl around for food or to find a mate. If frightened, they quickly flee back to deep water. They like to crawl and do not like to swim. They crawl forward when foraging and moving, and quickly jump back to avoid being frightened or encountering an enemy.

Crayfish and lobster are not the same species. Although they are both crustaceans, one is a freshwater species and the other is a marine species.
