Lotus Seed and Tremella Soup

Ingredients: 200 grams of lotus seeds, appropriate amount of white fungus, 250 grams of white sugar, a little sugar osmanthus juice and baking soda.

Preparation method: Put baking soda and lotus seeds (peeled) in boiling water, wash with clean water to remove the alkaline taste, and remove the lotus core. Blanch the lotus seeds in boiling water. Amber Lotus Seeds

Ingredients: 100 grams of red bean paste, 100 grams of golden cake, 250 grams of dried lotus seeds, 300 grams of glutinous rice, and appropriate amounts of white sugar, osmanthus sugar, and rock sugar.

Preparation method: Soak the dried lotus seeds for a while, remove the skin and core, blanch them in boiling water, add sugar and water, and steam them until they are half done. Boil the glutinous rice for a while, remove it, steam it in a steamer, and mix it with sugar and osmanthus sugar. Spread a layer of cooked lard in a large bowl, place the lotus seeds in the bowl, sprinkle with crushed rock sugar, spread the cooked glutinous rice on it, sandwich the red bean paste filling in the middle of the cooked glutinous rice, and steam it thoroughly. Mash the golden cake into a paste, put it in the pot with the sugar, add water to thicken it into an amber-like sticky sauce, and pour it on the lotus seeds.
