Step 1: Prepare 5000g small melon, 400g salt, 750g sweet noodle sauce

Step 3: Put salt in the jar and press the small melons flat with your hands.

Step 4: After pickling for about four days, the cucumbers will release water and you should drain the brine.

Step 5: Pour out the salt water in the jar and wipe the jar clean.

Step 6: After all the water in the jar is removed, add the cucumber strips and sweet noodle sauce, mix well and marinate for ten days.

2. Pickling method of small melon - Sichuan style

Step 1: Prepare 500 grams of small melon, 30 grams of red pepper, 10 grams of salt, a little sugar, sesame oil, pepper, garlic and shredded ginger.

Step 2: Wash the small melons, cut off both sides and then cut into strips, and marinate with salt for twenty minutes.

Step 3: Put sugar in a bowl and add boiling water. After it becomes sugar water, add white vinegar and mashed garlic.

Step 4: Squeeze out the water from the pickled melons and put them in a bowl, then add the prepared sweet and sour water.

Step 5: Pour the fragrant chili oil on the cucumber and it is done.
