1. First of all, the most important step in making sour beans is to select the materials. You should choose beans without worm holes and of uniform size. You can judge by pinching them with your hands. Apply a little force with your hands. If they are firm, it means they are very fresh. If they are flattened when pressed, they are bad and should not be chosen.

2. Wash the beans, put them in the sun or a ventilated place to evaporate the moisture on the surface, and then cut them into small pieces according to your preference. Of course, you can also pickle them whole.

3. Choose a suitable container, preferably a clay pot, ceramic or the like, or a glass jar if you don't have one. Clean the jar and make sure there is no oil stain. Choose a cool place to dry the water inside.

4. Boil water in a pot, add appropriate amount of pepper and salt, let cool and set aside.
