Fried eggplant cake ingredients and methods

Ingredients for Fried Eggplant Pancakes:

Eggplant, minced meat, flour, eggs.

Fried eggplant cake seasoning:

Pepper, salt, chopped green onion and ginger, light soy sauce, cooking wine, baking powder, and starch.

Fried eggplant cake production process

1. Cut the eggplant into 3 cm diameter and half cm thick slices; use a knife to cut in the middle without cutting through, leaving it in a hinged shape.

2. Mix the minced meat with cooking wine and salt, and fill them into the eggplant slices respectively.

3. Beat the eggs and add flour to make a paste.

4. Put oil in the pan and heat it up. Dip the eggplant slices in the egg batter and fry them one by one in the pan until they become eggplant cakes. Remove from the pan.

5. Heat the oil pan again and fry the eggplant cakes again. When they are golden in color and crispy on the surface, remove them from the pan.

Precautions

Eggs: Eating them with goose meat will damage the spleen and stomach; eating them with rabbit meat or persimmon will cause diarrhea; and they should not be eaten with turtle, carp, soy milk, or tea.
