Whenever I can’t finish the rice I make, I always make eggplant fried rice, which is delicious. Today I will tell you how to make it:

Eggplant fried rice ingredients

1 eggplant 100g lean meat

Rice with ginger

Garlic and Onion

Oyster sauce starch

Chicken with chopped pepper

Eggplant Fried Rice Recipe

1. Wash the lean meat, chop it into minced meat, add a little starch and mix well; wash the eggplant, remove the stem and cut it into small cubes, chop the ginger and garlic, and cut the green onion into flowers.

2. Heat the pan with oil, add the minced meat and fry until it changes color, then scoop out and set aside

3. Add some oil to the pan, add the diced eggplant, and stir-fry until soft.

4. Add the previously fried lean meat, oyster sauce, salt, chicken essence, and chopped pepper and stir well.

5. Add rice and stir fry evenly

6. Add chopped green onion and stir well.

Tips

1. When frying eggplant, add a little salt first, so that the eggplant is easier to be fried soft;

2. Because oyster sauce, chicken essence, and chopped pepper all contain salt, please add salt as appropriate.

Ingredients: 300g eggplant, appropriate amount of garlic

1. Wash the eggplant and cut it into thin strips. Boil water in a pot, put the eggplant strips into a plate, cover the pot and steam over high heat for about 8 minutes, until you can poke it with a chopstick. Take it out and let it cool, then put it in the refrigerator for 10 minutes.

2. Chop the garlic into fine pieces, add vinegar, soy sauce, sesame oil and appropriate amount of salt, mix well and set aside; cut the red pepper into small circles and set aside

3. Take out the refrigerated eggplant, pour the sauce on it, mix well, and finally garnish with chili rings

Tips

Eggplant contains vitamin E, which has the function of preventing bleeding and anti-aging. Eating eggplant regularly can prevent the increase of cholesterol level in the blood, which has a positive significance in delaying human aging. And this steamed eggplant with garlic can better ensure that the nutrients of eggplant are not lost than braised eggplant.
