1. Peel off the outer shell of bamboo shoots and cut into thick strips for later use

2. Soak the purchased wakame in water for a day. Wash the wakame and cut it into thick strips for later use.

3. Wash the celery and red pepper separately, and cut them into thick strips for later use.

4. Wash and peel the ginger, cut into pieces and set aside

5. Remove from heat, blanch wakame strips in boiling water to remove fishy smell and set aside

6. In another pot, add a little oil, stir-fry the minced ginger, add bamboo shoots and kelp, stir-fry briefly, add some water to season and cook for a while to let the dishes absorb the flavor. When the two dishes are almost cooked, add celery and red pepper, stir-fry for a while, add a little sesame oil and serve.

Tips

This dish is bright in color, fresh and salty, with a slight fishy smell. The key to making this dish is to add some minced or shredded ginger to remove the fishy smell. When all four dishes are put into the pot, they must be stir-fried over high heat, so that the dishes are particularly fragrant. In addition, this dish does not require starch.

In order to make vitamin A fully play its role, carotene must be introduced. Carotene is also called the factory for producing vitamin A. After entering the body, carotene is immediately decomposed, and 1/3 of it is converted into vitamin A. Therefore, when stir-frying or mixing wakame, adding some carrots will make it easier for the body to absorb vitamin A.
