Steps to make shrimp and eggplant sandwich

Have you ever eaten shrimp and eggplant sandwich? It's delicious, and I often make it when I have nothing to do. Here's how to make it:

How to make shrimp and eggplant sandwich

1. Wash the eggplant, slice it, do not cut the middle of each slice, cut it into eggplant slices, sprinkle a little salt and marinate

2. Beat an egg into half a bowl of low-gluten flour, add appropriate amount of water, and stir well to form a dough without lumps.

3. Add a little cooking wine and soy sauce to the meat filling, stir evenly, add a tablespoon of peanut oil and a little sesame oil, and a little salt to marinate.

4. Chop the scallion and ginger, remove the sand from the shrimp, clean it, and marinate it with a little salt and cooking wine. After marinating, remove it and use a paper towel to absorb the moisture

5. Mix the onion, ginger and meat filling evenly. Take an eggplant clip, put a shrimp on it, and then stuff the meat in it so that the meat wraps the shrimp.

6. Put half a pot of oil in the pan. When the oil is hot, keep the heat at medium. Put the eggplant boxes covered with batter into the pan and fry until the eggplants are golden and crispy. Turn the heat up and turn it over a few times before taking it out and draining the oil.

7. Crush some garlic, add a little soy sauce, and eat with garlic.

Tips

The eggplants should be cut into even thicknesses so that they will mature together when fried.

Use low-gluten flour to make the batter, and the fried eggplant sandwiches will be especially crispy.

The shrimps must be dried before use, otherwise oil will pop when frying.

When frying eggplant, keep the heat at medium, and turn to high heat when it is almost done. This will force the oil in the eggplant out, making the eggplant less greasy.

This is best eaten while hot~~~it will collapse if it cools down.

It doesn’t look that great on the surface, but there’s a surprise every time you bite into one, ahahaha.

13. Add the fried stinky tofu

Tips

1. I fried the stinky tofu, you can deep-fry it.

2. When frying the eggplant, use high heat to fry until it is soft, then add some stinky tofu marinade.
