Chinese chives, also known as aphrodisiac grass, is a plant of the Liliaceae family. What we hear most about is scrambled eggs with Chinese chives, but there are more ways to cook Chinese chives .

Introduction of Chinese chives

It is also known as aphrodisiac grass, yang-driving grass, immortal grass, and yang-raising grass.

Chives are the leaves of the leek plant of the Liliaceae family, a perennial root vegetable.

It is native to East Asia and has a long history of cultivation in my country. It is widely distributed, especially those produced in the Northeast, where the quality is better.

The types of non-vegetable leeks can be divided into three types: leeks for leaves, leeks for flowers, and leeks for both flowers and leaves. The leaves of leeks for leaves are wider and softer, with less moss, and the leaves are mainly eaten. The leaves of leeks for flowers are short and hard, with more moss, and the flower stems are mainly harvested. The leeks for both flowers and leaves are good, and most of them are cultivated in my country.

Due to the different leaf shapes, it can be divided into broad-leaf allium and fine-leaf allium. Broad-leaf allium is cold-resistant and is also called mouth allium. It is mostly cultivated in the north. The leaves are wide and soft, light green, less fiber, and of good quality, but the fragrance is not as good as fine-leaf allium. Fine-leaf allium is heat-resistant and is mostly cultivated in the south. The leaves are narrow and long, dark green, more fiber, and rich in fragrance.

The leek grown in the dark in the greenhouse is also called leek. Its roots are round and white, and its leaves are light yellow with a slight earthy smell. The leaves are tender and soft, but not as fragrant as leek.

Leeks are the main ingredient in making dumplings during the Chinese New Year in the north. They are green in color and have a strong flavor, which can enhance the flavor of both meat and vegetarian dishes.

How to cook chives

Fried eel with chives

Material

300g eel , 100g leek , 2 cloves of garlic , 1 tablespoon sesame oil ,

A. 2 tablespoons black vinegar , 1/2 teaspoon soy sauce , 1 tablespoon sugar, 2 tablespoons water,

B. 1 tablespoon sesame oil, 1 tablespoon wine, 1/8 teaspoon salt, 1/8 teaspoon sugar, 1/2 egg white , 1 teaspoon cornstarch

1. Remove the eel's intestines, mud, head and tail, cut into sections, wash and marinate for about 15 minutes.

2. Slice the garlic and cut the chives into sections, set aside.

3. Heat the pan, pour in a proper amount of salad oil, add the eel pieces prepared in step 1 with cold oil, stir quickly over high heat until they change color, remove from the pan and drain the oil for later use.

4. Leave a little oil in the pan from step 3, sauté the garlic slices, and add all the seasonings.

5. Add the eel segments from step 3 and the leek segments from step 2 and stir-fry evenly. Add sesame oil and mix well before serving.

Chive Dumplings

Ingredients: 250g minced meat , 500g dough, 100g chives

Seasoning: 3g salt, 5g MSG , 3g sugar, 3g sesame oil , a little pepper , cooking oil

1. Wash the chives and cut them into small pieces;

2. Mix the chopped chives into the meat filling;

3. Add all seasonings and mix well to make the filling;

4. Take a dumpling wrapper and put 20 grams of meat filling in it;

5. Fold the dough into a semicircle and seal it by pinching the edges;

6. Pinch the edges tightly;

7. Then squeeze the dough from the middle to the outside;

8. Let go and the dumpling dough will be ready.

Special Tips

After the leeks are mixed, they must be wrapped immediately, otherwise water will come out.

Shredded pork with chives

This dish is light yellow in color, delicious, salty, slightly sour, fragrant and tender.

Material

200g pork , 100g leek , 5ml soy sauce , 3g starch , add water to make soy powder , 5g salt, 8ml vinegar, 30ml soup (or water), 50ml vegetable oil, 1g MSG

practice

1. Pick and wash the leeks, cut into sections about 3 cm long.

2. Cut the pork with a fat-to-lean ratio of 2:8 into strips about 0.3 cm thick, put it in a bowl, add a small amount of salt and water bean powder and mix well.

3. Mix soy sauce, vinegar, water bean powder, MSG and fresh soup into sauce.

4. Heat the wok on high heat and add oil. When the oil reaches 60% temperature, add the shredded pork and stir-fry. Add the leek and stir-fry evenly. Pour in the starch sauce and serve after the sauce is absorbed.
