Eggplant and beans ingredients:

300 grams of long beans, 300 grams of eggplant, a little dried chili, appropriate amounts of garlic, minced ginger and light soy sauce, also some chicken essence, salt and cooking oil.

Specific steps for making eggplant and beans

1. Cut the prepared eggplant into long strips with a knife, and then soak it in light salt water. This will remove all the toxic substances in the eggplant.

2. Wash the long beans, cut them into small pieces of four to five centimeters and set aside. Peel the garlic and set aside.

3. Put water in a pot and bring it to a boil over high heat. Then put the cut long beans into the boiling water and blanch them. Then take them out and put them in cold water for a while. This will ensure that the color of the beans is attractive green.

4. Put a little more oil in the wok than usual, first add the minced ginger and dried chili and fry them, then take them out and add the cut eggplant strips and fry them. Wait until the eggplant changes color and becomes soft before adding the processed beans.

5. Add the green beans and continue to stir-fry. After about a minute, add the flattened garlic and light soy sauce, and stir-fry evenly. It is best to add chicken essence and salt and stir-fry evenly before serving.
