1. Ingredients: 100 grams of Osmanthus fragrans, 30 grams of chili pepper in oil, 15 grams each of onion, ginger and garlic, 60 milliliters of vinegar, 45 grams of sugar, 10 grams of salt, appropriate amount of water, 5 grams of chicken essence, a little white sesame seeds and red pepper.

2. Wash the dried osmanthus you bought with clean water, and then soak it in boiling water at about 80 degrees. After soaking for three hours, take it out and wash it several times with clean water, and then soak it in boiling water at 80 degrees. After five hours, take it out and wash it, and then soak it in cold water for several hours. Only by washing it several times can the bitter taste of the osmanthus be removed.

3. Put the washed osmanthus in a pot, add water and boil. Cook for about five minutes, take out and rinse with cold water, then take out and drain. Chop the green onion, ginger and garlic into fine pieces and set aside. Put all the seasonings together to make a sauce and set aside.

4. Put oil in the pot and heat it to 40% hot, then pour the oil and chili into the pot and stir-fry. Then add the chopped onion, ginger and garlic to stir-fry until fragrant. Then put the prepared sauce into the pot, turn to high heat and bring to a boil, then add the processed osmanthus and stir-fry for three minutes, then turn off the heat.

5. After turning off the heat, do not take the osmanthus out of the pot immediately. Let it soak in the soup in the pot for 30 minutes, then take it out of the pot and serve it on a plate. It is best to sprinkle white sesame seeds and red pepper on it for decoration.
