How to pickle fresh peppers

1. Before making pickled fresh peppers, in addition to preparing 500 grams of fresh peppers, you also need to prepare 500 grams of carrots, and then the seasonings used in normal cooking, the most important of which are salt, ginger and garlic.

2. Remove the stems of the fresh peppers you bought, then wash them with water and set aside. Wash the carrots with water as well, then cut them into larger thin slices and set aside.

3. Cut the ginger into slices, then peel the garlic and cut it into small pieces. What you need to pay attention to here is that they cannot be allowed to contain raw water. They should be dried as necessary after cutting, otherwise the pickled peppers will easily deteriorate.

4. Put the processed fresh peppers and carrot slices into the pickled pepper container, then add the ginger slices and garlic slices, and then add cooking oil, white wine, sugar, soy sauce and other seasonings. After adding the seasonings, use chopsticks to mix them evenly before storing.

5. If you want to add some peanuts, you can also cook the peanuts in advance, remove the water and add them in.

6. After pickling the fresh peppers, remember to turn them over three times a day with clean chopsticks. After about a week, you can take them out and eat them. However, after you start eating them, you must remember to turn the peppers over every day. When the pickling time reaches one month, you can take them out and store them in a jar for long-term storage.
