Ingredients for Braised Yellow Croaker with Garlic

1 small yellow croaker, 50g garlic cloves, 100cc water, 1 tbsp soy sauce, 1/2 tbsp oyster sauce, 1 tsp rock sugar, 1 tbsp rice wine, 10g scallion, 10g ginger, 1 tbsp rice wine, a pinch of salt

How to cook yellow croaker with garlic

1. Wash the small yellow croaker, cut three times on the fish, add marinade for about 15 minutes and set aside.

2. Heat the pan, add 3 tablespoons of salad oil, add the garlic cloves and stir-fry until slightly charred, remove the garlic cloves and set aside.

3. Add the yellow croaker to the pan in step 2 and fry over medium-low heat until both sides are browned.

4. Put the garlic cloves from step 2 back in, add all the seasonings and water and cook until the flavors are absorbed.

How to cook yellow croaker with garlic:

1. Wash the yellow tea fish, remove the scalp and dorsal fin, and then wipe dry with a paper towel (others asked to remove the internal organs from the gills, which is a bit technical, so I just cut open the belly of the fish to clean it)

2. Put 4 tablespoons of oil in the pot, sauté the scallions and ginger until they are fragrant and browned, then remove them. Add the peeled garlic cloves and fry them over low heat until the skin turns slightly yellow.

3. Put the fish into the pan and fry both sides, then add all the seasonings and bring to a boil. Return the garlic cloves to the pan and simmer for 10 minutes to make it taste good. Turn the fish over halfway through. When the soup is slightly dry, add starch to thicken it, sprinkle with green garlic shreds and serve.
