1. Put sugar, vinegar and salt in a small bowl, mix well with chopsticks, and set aside.

2. Peel the prepared white radish, then cut it into two to three centimeter pieces with a knife, add salt and marinate it. After the water is marinated out, remove the water and take it out for later use.

3. Take another grapefruit peel and cut it into strips. Remember to remove the white substance inside the grapefruit peel and only keep the yellow peel. Otherwise, the pickled radish will taste bitter.

4. Put all the prepared seasonings, chopped radish strips and chopped grapefruit peel together, then mix evenly with chopsticks. Put them in a sealable container and seal it. Refrigerate it in the refrigerator for about three days, and it will be marinated. You can take it out and use it at any time when making sushi.
