After collecting the osmanthus, you must go home and carefully select it, remove the remaining flowers and then remove the flower stalks.

2. Prepare an appropriate amount of table salt, add an appropriate amount of clean water to make light salt water, and then soak the processed fresh osmanthus directly in the light salt water for about 15 to 20 minutes. After soaking, take out all the floating osmanthus petals, and discard the remaining impurities underneath. Then dry the surface moisture of the washed osmanthus.

3. After the fresh osmanthus flowers are dried, add appropriate amount of table salt and mix well and marinate for half an hour. This will shrink the moisture in the osmanthus flowers, remove its color and smell, and kill the bacteria on its surface. Prepare a large roll of fresh-keeping box and disinfect it, then spread the pickled osmanthus flowers on the bottom, then put a layer of white sugar, then a layer of fresh osmanthus flowers, and then another layer of white sugar.

4. After all the sugar and osmanthus are put into the fresh-keeping box, seal the box and store it in a warm environment. After about 20 days, the osmanthus inside will be fermented and you can get the cured sugar osmanthus. Every time you eat sugar osmanthus, use a clean, water-free and oil-free spoon or chopsticks. This will allow the pickled osmanthus to be preserved for a longer time without deteriorating.
