Check whether it is fresh when buying

Professor He said that one of the characteristics of aquatic products is that they are not easy to preserve. Take shrimp, which we often eat, for example. They contain a lot of protein. If they become corrupt, the protein in the shrimp will decompose and produce toxins. In addition, corrupt shrimp will also produce a large number of microorganisms, which are harmful factors that affect health. Therefore, when choosing aquatic products, special attention should be paid to whether they are fresh.

Professor He warned everyone: The shell of fresh shrimp should be blue-gray, transparent and shiny, with the head and body tightly connected. If the shrimp shell has turned red and the head and body are broken, it is best not to buy it. When buying shrimp, you should also pinch it with your hands to judge the freshness of the shrimp by the feel and elasticity of the shrimp meat: fresh shrimp meat is elastic, while stale shrimp meat is often dry and soft.

At present, crabs are on the market in large quantities. Professor He pointed out that river crabs must be bought alive. Dead crabs contain a large number of halophilic bacteria, which can cause nausea, vomiting and even poisoning in people. When buying, you can use your fingers to tease the eyes of river crabs. If they react immediately, it means that they are full of vitality; if the eyes are protruding and unresponsive, they may be dead. In addition, take the river crabs to a place with backlight, and determine their fatness based on the width of the light-transmitting slits (the narrower the light-transmitting slit, the fatter the river crab).

The origin of seafood is very important

Professor He emphasized that it is best to inquire about the origin in detail when buying aquatic products. There will be differences in the safety of seafood produced in different regions: seafood from severely polluted waters is likely to contain harmful substances such as heavy metals; and some artificially farmed aquatic products may be affected by industrial wastewater and contain toxic substances.

According to Hong Kong media reports, in August this year, many hairy crabs pretending to be from Yangcheng Lake were sold in Hong Kong, some of which were pond crabs or wild crabs. The test report showed that the chloramphenicol content in these fake hairy crabs seriously exceeded the standard, and eating them could cause liver failure. Professor He warned everyone not to just buy cheap aquatic products. It is best to choose reliable merchants to avoid buying counterfeit and shoddy products. Some aquatic products in the farmers' market that are too cheap, of unknown origin, or have a muddy smell are likely to have quality problems.
