How to dry carambolas

To make dried carambolas, you need to pick ripe, insect-free, and uncorrupted carambolas. After washing them, cut them into thin slices, which makes them easier to absorb the flavor. First, add some sugar or salt to marinate for a while, and then take them out to dry. It is said to be dried in the sun, but in fact, it does not need to be exposed to the sun. Just put it in a ventilated place and let it dry naturally.

First, pick the more mature and larger carambolas, soak them in warm water, and then wash them under the tap. Put the carambolas on the chopping board and use a knife to cut the carambolas into thin five-pointed star slices. The slices must be thin, preferably about 0.5 cm. If they are too thick, they will not be so easy to taste. Thin ones are both pleasing to the eye and easier to taste.

Put the sliced ​​carambolas in a clean large bowl, add an appropriate amount of salt, stir well, and marinate for about an hour. Then take out the carambolas and drain the salt water. Don't add too much salt, as this will make the carambolas too salty and bitter. Of course, don't add too little either, as this will make it difficult to marinate the carambolas.

Making dried carambolas

Next, heat the wok, add a little sugar, put the carambola slices in, and simmer over low heat, stirring while cooking to prevent the wok from getting stuck. When the carambola becomes transparent, take out the carambola slices and place them in a cool place to cool. Add some sugar and stir evenly. Then put the dried carambola outside to dry, but avoid direct sunlight.
