Black bean porridge knowledge introduction

Black beans contain high levels of trace elements such as zinc, copper, magnesium, molybdenum, selenium, and fluorine, which are very important for delaying human aging and reducing blood viscosity. The crude fiber content in black beans is as high as 4%. Eating black beans regularly can provide crude fiber in food, promote digestion, and prevent constipation.

Black beans are sweet, mild and non-toxic. They can invigorate blood circulation, promote diuresis, dispel wind, clear away heat and detoxify, nourish blood, and replenish deficiency and darken hair. "Compendium of Materia Medica" says: "Black beans have many functions for the eight kidneys, so they can treat water retention, relieve swelling, relieve gas, control wind and heat, and invigorate blood circulation and detoxify."

Black beans are rich in nutrition. Every 100 grams contains 36.1 grams of protein, 15.9 grams of fat, 10.2 grams of dietary fiber, 23.3 grams of carbohydrates, 224 milligrams of calcium, 243 milligrams of magnesium, 1377 milligrams of potassium, 500 milligrams of phosphorus, and essential vitamins B1, B2, C, niacin, and trace elements such as iron, manganese, zinc, copper, molybdenum, and selenium. Black beans are the most nutritious health product among plants.

The protein content in black beans is more than twice that of beef, chicken, and pork, and 12 times that of milk. It is not only high in protein content, but also of good quality. The amino acid composition of black bean protein is similar to that of animal protein. It is rich in lysine and close to the proportion required by the human body, so it is easy to digest and absorb. Black bean fat contains more unsaturated fatty acids, has a low melting point, is easy to digest and absorb, and will not deposit on the blood vessel wall. Its biggest feature is that it contains plant sterols, which are not only absorbed by the human body, but also can inhibit the absorption of cholesterol. Therefore, black beans are an ideal health product for middle-aged and elderly people with arteriosclerosis. The calcium rich in black beans is an excellent source of calcium supplement for the human body. Potassium plays a role in maintaining the osmotic pressure and acid-base balance inside and outside the cells in the human body, and can eliminate excess sodium in the human body, thereby effectively preventing and reducing high blood pressure. The iron in black beans can prevent iron deficiency anemia in the human body, and iodine can prevent goiter. Molybdenum can inhibit the synthesis of strong carcinogens nitrosamines in the human body. Studies have shown that the isoflavones in black beans are a type of phytoestrogen that can effectively inhibit breast cancer, prostate cancer, and colon cancer, and are also helpful in preventing and treating osteoporosis in the middle-aged and elderly. Bean skins and bean dregs contain cellulose, hemicellulose and other substances that can prevent constipation and enhance gastrointestinal function. The glycemic index of black beans is very low, only 18, while the staple food of Chinese people, rice and wheat steamed bread, is as high as 88, nearly 5 times that of black beans. Therefore, black beans are very suitable for diabetics, people with impaired glucose tolerance, and people who want to control blood sugar.

In the long-term agricultural society, people found that livestock became stronger and more resistant to diseases after eating black beans. Therefore, black beans were mainly used as livestock feed in the past. In fact, this was determined by the inherent nutrition and health benefits of black beans. At that time, people advocated white food, and only the poor and those who could not get enough food had no choice but to eat black beans. However, doctors and health practitioners discovered and summarized the medical and health care effects of black beans.

Due to the different varieties, climates, and soils, the quality also varies to a certain extent. Black and shiny colors are the best. There are many ways to eat black beans. They can be ground into flour and steamed into steamed buns; boiled and made into salad; fried and made into snacks; made into soy milk and made into beverages; and sprouted and made into vegetables. It not only increases the vitamin content, but also makes the protein and fat easier to digest. Although black beans are a good nutritional health product, they must be cooked before eating, because there is a component called antitrypsin in raw black beans, which can affect the digestion and absorption of protein and cause diarrhea. After boiling, frying, and steaming, the antitrypsin is destroyed, eliminating the side effects of black beans.
