When you make pickled peppers yourself, you need to prepare 500 grams of fresh green and red peppers, 50 grams of salt, a piece of ginger, a handful of peppercorns, an appropriate amount of white vinegar, an appropriate amount of high-proof liquor, an appropriate amount of water, and a pickle bottle or jar, preferably a sealed glass container.

1. Wash the prepared green and red peppers with clean water, remove their stems, and dry them on the surface. Make sure that no moisture remains, otherwise they will easily deteriorate during pickling.

2. Wash the ginger and cut it into slices. Put the wok on the fire and dry it over low heat. Then add salt, ginger slices and peppercorns into the wok and slowly stir-fry to bring out the aroma. After it is fragrant, add water and white vinegar and bring to a boil.

3. Add an appropriate amount of white wine and mix well, then turn off the heat and let it cool naturally.
