Dry-fried tiger prawns

1. Heat oil in a pan, sauté ginger slices, garlic, and scallions until fragrant;

5. Add black peppercorns, cinnamon sticks, bay leaves, star anise, thyme and garlic and stir-fry

6. Place the tiger prawns on the coarse salt and half a lemon

7. Cover the pot and cook for 5 minutes, turn off the heat and simmer for 10 minutes until the tiger prawns are fully cooked.

8. Serve with remaining lemon
