2. When frying Arctic shrimp, use a high heat and fast frying method. When the oil temperature is heated to 80%, put the shrimp in and fry until the shrimp skin (especially the shrimp head) expands and separates from the shrimp meat. Take the shrimp out and fry it again quickly to make the shrimp more fluffy. Then add a little water to the oil pan and make the hot oil fully boil to make the shrimp skin more fluffy. The advantage of doing this is that the flavors of various seasonings are fully absorbed by the Arctic shrimp, and the shrimp looks bigger and fuller.
