Material

Half a watermelon rind, dried chili peppers, Sichuan peppercorns, oil, sesame oil, Zhejiang vinegar (or rice vinegar), salt, chicken stock, garlic

How to make cold watermelon rind

1. Wash the watermelon rind, cut into pieces, peel off the skin, marinate with salt for a while and set aside. Chop a lot of garlic.

2. Spread the garlic on the watermelon rind, mix appropriate amount of peppercorns with oil and sesame oil, fry until fragrant, then remove the peppercorns, break off 2-3 dry chilies and continue frying until fragrant.

3. Pour appropriate amount of chicken essence and vinegar on the watermelon rind, then add hot oil, stir evenly and put in the refrigerator for 2 hours.

How to make cold watermelon rind

1) Leave a little watermelon pulp, don't remove it all, so it tastes sweet. -

2) Use a blade to remove the green hard skin. Cut the watermelon rind into 1cm dices. Wash the coriander and cut into 1cm long pieces.

Cut out the white part of the watermelon rind and cut it into small pieces. Put them in a bowl, sprinkle some salt on them and marinate for ten minutes.

Wash the pickled watermelon rind with cold boiled water and then add the seasoning.

Add appropriate amount of sugar, salt chicken powder, sesame oil, pepper, chili oil (I couldn't buy it temporarily, so I used Lao Gan Ma instead), chopped coriander, and mix well. (If you like, you can also add a little vinegar) It tastes really good~~
