Methods and tutorials for home brewing liquor

Baijiu is a traditional Chinese drink, and it is the favorite of many men. Some people drink it almost every day, and even want to brew it at home, but they don't know how to do it. In fact, the idea of ​​brewing Baijiu at home is completely feasible, and the process of brewing Baijiu at home is also very simple. I will write them down in a while. If you are interested, you can try it. After success, you can drink the pure grain Baijiu you brewed yourself.

1. Make wine and food

The first step in brewing liquor at home is to make rice. The ingredients can be rice, wheat or glutinous rice. Wash them, put them in a pot, add water, heat and steam them.

2. Add the koji

After the steamed rice has cooled down, add the prepared koji, mix it with chopsticks, put it into an open earthenware jar, and cover the mouth of the jar with gauze. The koji used here is preferably yellow wine koji or Angel koji, which can be bought in food additive specialty stores.

3. Fermentation

After adding the koji, fermentation can begin. Most of the time, the rice and wine will reach the peak of saccharification after 24 hours. At this time, pour the rice and wine into the fermentation tank, add an appropriate amount of mineral water, and place it at a ratio of one kilogram of rice to two kilograms of mineral water. After placing it, seal the tank mouth and ferment it in a warm environment. Fermentation will be completed in about 20 days. If the environment feels a bit cold, you can cover the outer layer of the fermentation tank with two layers of quilts, which will allow the materials inside to ferment faster and more evenly.

4. Distillation

The fermented raw materials are filtered and squeezed, and then put into a special micro-distiller for distillation and heating. The equipment is an induction cooker. When distilling, you can first boil it with high heat, and then use medium heat after boiling. After a while, the wine inside will be distilled out continuously. After the first distillation, it will be distilled twice. After the wine is completely cooled, it is homemade liquor, which can be sealed in a glass bottle for storage.
