Ingredients for making pickled pork

When making Yan Du Xian at home, you need to prepare 300 grams of bacon, 300 grams of pork belly, 400 grams of fresh bamboo shoots, three pieces of scallion, two to three slices of ginger, 20 grams of rice wine, 100 grams of bean curd, three stalks of bok choy, and an appropriate amount of water.

Production steps of Yan Du Xian

1. Wash the prepared bacon and pork belly and cut them into cubes. Then remove the skin of the fresh bamboo shoots and cut them into dice. Finally, wash the qingjiang vegetables and cut them into sections for later use.

2. Pour clean water into the pot and bring it to a boil. Add the pork belly, scallion segments, ginger slices and rice wine and bring to a boil. Then turn to low heat and cook for ten minutes, then take out.

3. Add clean water to a new pot and bring to a boil. Add the bacon, cooked pork belly and bamboo shoots into the pot. Bring to a boil over high heat, then turn to low heat and simmer for an hour, until the soup turns milky white.

4. Add the prepared bean curd sheets and continue cooking for about half an hour. Finally, add the chopped Qingjiang vegetables and mix well. Remove from the pot and serve in a bowl.

5. When making pickled pork with preserved vegetables, there is no need to add additional salt. The salt in the bacon will make the pickled pork with preserved vegetables salty. Adding more salt will make it too salty and affect the taste.
