You can prepare the vinegar, sugar and salt for garlic in a ratio of 10:1:2:2, that is, 100 kilograms of garlic should be matched with 10 kilograms of vinegar, 20 kilograms of sugar and 20 kilograms of salt. Garlic should be freshly harvested and not dried.

Authentic pickled garlic steps

1. Remove the roots of the fresh garlic you bought, leaving only about three centimeters of the stem, then remove the outer layer of old skin, leaving only the innermost two or three layers of tender skin.

2. Put the garlic into a container, add salt and marinate for about two days, turning the container over once in a while.

3. Remove the salt water from the pickled garlic, and then add clean water to soak it. The soaking time should be between three to four days, and the water should be changed once a day. After soaking, take out the garlic and drain the water.

4. Take out the processed garlic and put it into a new container. Add salt, sugar, vinegar and appropriate amount of cold boiled water. The amount of water should be enough to cover the garlic. Then seal the container and put it in a cool and ventilated place to marinate. After about 20 days, the authentic pickled garlic will be flavorful. The marinating is complete and you can take it out and eat it when you want to eat it.
