Spicy chili oil recipe tutorial

Spicy chili oil is one of the essential delicacies in every family. Here is how to make it:

Chili oil preparation:

The best chili powder, pepper, sesame, salt, preferably some fried peanuts, mix them and put them in a container that is not afraid of heat. Chili powder is the most, and the other ingredients are used as appropriate.

Chili oil production:

1. Heat a pot of oil (the oil should smoke), turn off the heat and let it sit for a while.

2. Then slowly pour the hot oil into the prepared chili powder, stirring the chili powder evenly with chopsticks while pouring (Tip: put a rag under the container to prevent the container from moving).

3. It is better to use more oil rather than less. The chili powder should be completely covered after cooking.

Chili oil

The choice of oil is very important. Generally, soybean oil (rapeseed oil) + sesame oil is used to fry chili oil. This kind of chili oil has a good color.

Then the ingredients: star anise, cloves, galangal, bay leaves, cinnamon, and a little peppercorns (the amount of peppercorns depends on personal taste, if you like it spicy, add more).

It is best to grind these spices into powder and put them together with the chili powder (if conditions are not available, soak these ingredients in cold water to allow the spices to fully develop their flavor.)

Scallion segments. Some slices of ginger. Sesame seeds (peeled ones are best) and fried peanuts (fried peanuts that have been crushed). A little salt and MSG.

Now turn on the fire: first add soybean oil or rapeseed oil, and when the oil is cool, add the onion and ginger into the pot. Simmer (it must be on low heat). If the seasoning is not ground, add the soaked seasoning into the oil. When the oil is slowly heated and the ingredients are fragrant (do not fry them until they are burnt), remove the ingredients.

Then bring the oil to a boil over high heat, making sure the oil is thoroughly cooked so that the rapeseed oil has a good taste. Then turn off the heat and when the oil temperature drops to 60% hot, add sesame oil (the amount depends on personal taste, and those who don't like the taste of sesame oil can skip this step), chili powder, sesame seeds, and peanuts.
