  • Chili oil is widely used in Sichuan cuisine, whether it is cold dishes such as garlic pork and chicken, or snacks such as Dandan noodles and red oil fried hands, or even stir-fried dishes such as sesame pork. Many people know that the authenticity of a bowl of Sichuan's famous snack, Dandan noodles, depends largely on whether the chili oil is fragrant enough.

The traditional Sichuan chili oil method is to use rapeseed oil, heat it up, let it cool slightly, and pour it into the dried chili powder that has been crushed in a mortar in advance. When I was a child, my family would regularly make a large bottle of chili oil. Every time my mother made chili oil, I was very excited because the hot oil poured into the dried chili powder would emit a special burnt aroma. Watching my mother slowly pour the hot oil with one hand and gently stir the tumbling chili oil with the other hand, the bursts of chili fragrance came to my nose, making me unable to stop swallowing my saliva.

Nowadays, fewer people use traditional rapeseed oil. The chili oil made with salad oil is different from the chili oil I remember when I was a child. However, the red color and spicy taste will not change, and they are still as tempting!

Sichuan chili oil ingredients:

100g dried chili powder (preferably coarser ones), 10g white sesame seeds, 400g cooking oil, 3 large spices

Sichuan chili oil method:

1. Pour the chili powder and some white sesame seeds into a heat-resistant container. Since the chili powder will boil when heated, the container must be large enough.

2. Pour a proper amount of oil into the pot and add a few pieces of star anise when the oil is cool.

3. When the oil is 90% hot (smoking), turn off the heat and remove the spices.

4. When the oil is slightly cool, pour it into the chili powder in batches, stir well, and use it after it cools down. The remaining red chili oil can be bottled for use.

In addition, red chili peppers can also dilute the blood, which can prevent heart attacks and strokes. Chili peppers are rich in vitamin A, and eating them regularly can enhance a person's ability to fight aging. However, eating a lot of chili peppers can easily hurt the stomach, because a lot of chili peppers have destroyed the sensation of nerve endings, making the stomach vulnerable to damage.
