How to cook eggplant to save fuel

Today I will introduce a method of cooking eggplant, which is very fuel-saving and easy to make. It is a fuel-saving version of roasted eggplant:

Ingredients for the fuel-saving version of grilled eggplant

2 eggplants and half a carrot

A pinch of pepper and salt

Oil wine

Soy Sauce Vinegar

Sugar water starch

Minced garlic and chopped green onion

How to cook eggplant in a fuel-efficient way

1. Wash the eggplant, cut it into dice, mix it with salt and marinate for a while

2. Heat the oil in a frying pan, fry the eggplant cubes until soft, then set aside.

3. Heat a little oil in the pan, add minced garlic and sauté until fragrant

4. Add the sauce made of cooking wine, soy sauce, vinegar, sugar and water starch and cook until bubbles appear.

5. Add the fried eggplant, carrot slices and green pepper slices and stir-fry until the soup thickens, sprinkle with chopped green onions and serve.

Tips

Note that salt has already been added when pickling the eggplant, so don't add more salt later to avoid it being too salty.

When it comes to roasted eggplant, people always think of over-oiling. I remember the first time I made roasted eggplant was when I was dating my husband. One day, I volunteered to make roasted eggplant. I had no experience before that and relied entirely on my imagination. When the oil was heated and the eggplant was poured into the pot, the oil was immediately absorbed by the eggplant. I quickly poured more oil into the pot, and it was absorbed again. I poured more oil, and in the end, I used almost half a bucket of oil. The roasted eggplant was almost submerged in oil and I couldn't eat it at all!

After that lesson, I didn’t dare to cook the dish of roasted eggplant for many years. I was even a little scared of dishes that needed to be fried. Before my son was born, I almost never cooked similar dishes. As my son was born and grew up, I would try to cook dishes that I was afraid of in order to make him love to eat.

After accumulating a certain amount of experience, I gradually mastered some cooking tips. For example, for this roasted eggplant, there are two tips for saving oil:

1. Marinate the eggplant with salt for a while to extract some moisture from the eggplant and make it softer, so that the eggplant will not absorb too much oil when frying.

2. When frying eggplant in a non-stick frying pan, you only need to put a little more oil than usual. You don't need to put a lot of oil. The fried eggplant tastes no worse than deep-fried eggplant. On the contrary, it is more appetizing because it uses less oil.

My son always eats two bowls of rice with this fried eggplant. After a dinner with classmates, I asked my son how many bowls of rice he ate, and he still ate two! You know, if it wasn't for this dish that goes well with rice, one bowl would be enough! Yesterday, my classmates had another gathering, bringing their own children. My son was the only boy among them, but he was the thinnest! It seems that I still need to do some research on some dishes that my son likes to eat with rice. It is my ultimate dream to make him eat two bowls of rice every meal and gain weight as soon as possible!
