Homemade eggplant and beans recipe

Steps for making eggplant and beans

1. Wash the eggplants and soak them in water to remove the astringent water from the eggplants and allow the eggplants to absorb water and not absorb oil.

2. Mix the eggplant with cornstarch to lock in moisture when frying. This way the eggplant will be dry on the outside and soft on the inside with a good texture.

3. Boil the cooking oil over high heat. Note: You can use chopsticks to test the oil temperature. If you see bubbles around the chopsticks, it means the oil is hot.

Fry the eggplants and turn to medium-low heat after 2 minutes. This way the eggplant strips will look good and not mushy.

4. Boil the beans for 2 minutes, drain and fry them in oil. Remove from the pan and put them together with the eggplant. Add the minced garlic and red pepper and stir-fry for 2 minutes.

Then add eggplant, beans, soy sauce, oyster sauce and vinegar and stir fry continuously.

Finally, add the steamed fish soy sauce before serving.

5 Pour the green onions and oil on the eggplant, add some sesame oil, and you can start eating.
