Eggplant pancake recipe steps

We usually eat fried eggplants, but have you ever eaten eggplant cakes? They are delicious. Today I will tell you how to make them:

Eggplant cake ingredients

One eggplant and one hot pepper

250g self-raising flour 1 tsp ground ginger

1/2 tsp salt 1/2 tsp sugar

1 tbsp soy sauce 2 tbsp oil

140ml warm water

Eggplant pancake recipe

1. Dice the eggplant, chop the chili pepper, and mince the ginger.

2. Mix diced eggplant, chili pepper, minced ginger, soy sauce, salt, sugar and two tablespoons of oil.

3. Put it into the pan and fry on medium-low heat until the eggplant becomes soft.

4. Mix warm water and self-raising flour and knead into a smooth dough. Cover with plastic wrap or a wet cloth and let it rest for about half an hour.

5. Roll the dough into strips and cut into six equal parts

6. Take one portion and roll it into a round pancake. Put two tablespoons of filling in the middle, wrap it up, seal it, and then press it lightly with your hands to make it into a pancake. It doesn’t matter if it’s not sealed too tightly. It will be ready after it’s cooked.

7. Apply a little water on the surface of the wrapped cake, and then sprinkle with cooked sesame seeds~

8. Heat a little oil in a pan, fry the pancake on low heat for 2 minutes, then turn it over and fry for another 2 minutes. Because the filling is already cooked, you only need to fry the dough.

Tips

If you use ordinary flour, you need to dissolve the yeast with warm water first, add sugar and mix well, and then use it to knead the dough (250g ordinary flour, 140ml warm water, 3g yeast, 1 teaspoon sugar)
