Stir-fried tomato and cowpea

Have you ever eaten fried cowpea with tomatoes? It is very delicious. Today I will tell you how to make it:

Ingredients for stir-fried tomato and cowpea:

250g cowpea 1 tomato

3 eggs 4 cloves of garlic

1/2 teaspoon (3 ml) cooking wine 1/2 teaspoon (3 ml) soy sauce

1/2 teaspoon (3 grams) salt

Fried cowpea with tomatoes:

1. Wash the cowpeas and cut them into 3 cm long pieces. Wash the tomatoes and cut them into pieces. Crush the garlic.

2. Beat the eggs, add cooking wine and a little water, and stir evenly

3. Heat the pan and pour in the oil. When the oil is 80% hot, pour in the eggs and stir quickly with a spatula. When done, remove from the pan and set aside.

4. Pour a little more oil into the pot. When the oil is 70% hot, add the cowpeas and stir-fry for 2 minutes. Then add the tomatoes and stir-fry for 1 minute. Pour in a little water and add the crushed garlic. Cover the lid and simmer over medium heat for about 4 minutes.

5. After opening the lid, pour in soy sauce, add salt, pour in the fried eggs, stir-fry over high heat for 1 minute, and turn off the heat when the soup is slightly dry.

Tips:

1. When frying eggs, add a little cooking wine to the beaten eggs to remove the fishy smell of the eggs. Add a little water to make the eggs soft and tender due to the separation of water and oil.

2. When the oil is hot, pour the egg liquid into the pan and stir quickly with a spatula to fry until cooked. This will make the eggs very tender. Do not wait until the eggs are set before cutting them up.

3. When cooking with scrambled eggs, make sure to put the scrambled eggs back into the pan after the other dishes are fried and salted. Eggs easily absorb saltiness. If you put them in first, the eggs will taste very salty, and the other dishes will be slightly less fresh. 4. Use tomatoes to stew cowpeas. The sour taste can make the cowpeas more flavorful. Combined with the taste of garlic, there is nothing to say. Serve with rice.
