Purchase Note

When buying loofah, you should choose fresh, firm and shiny ones with tender green or light green skin. The top of the flesh is relatively full and not bloated. If the skin is yellow or dry and wrinkled, or the melon is swollen with spots and depressions in some parts, the melon is overripe and cannot be eaten. Loofah is easy to turn black because it is easily oxidized. To reduce blackening, cut and stir-fry quickly, or rinse with water after peeling, rinse with salt water, or blanch with boiling water.
