1.2 At room temperature, the physiological mechanism of fruit softening and browning is that the activity of fruit enzymes is very active, especially the rapid increase in the activity of pectin decomposing enzymes, cellulases, polyphenol oxidases, peroxidases and peroxidases, which promotes the softening of the flesh. As the fruit ages, the speed of enzymatic browning accelerates, causing the flesh to become browner.
