Tomato sauce ribs recipe

1. Cut the tomato into a cross shape and set aside; slice the garlic, wash the ginger and cut it into shreds, and do not discard the uneven edges of the ginger, set aside

2. Boil a pot of water, put the tomatoes in the boiling water and let them boil for about 1 minute, then take them out without discarding the water.

3. Put the ribs and ginger into boiling water, remove them after 5 minutes, rinse off the foam, and drain.

4. Peel the skin of the tomatoes and cut into pieces; put the ribs in a large bowl, add 1 spoon of cooking wine, 1/2 spoon of soy sauce, 1/2 spoon of vinegar, a little pepper, and marinate for 10 minutes

5. Pour oil into the pan, add rock sugar, turn on the heat and stir-fry until the rock sugar is almost melted, then turn off the heat and use the remaining heat to stir-fry the sugar color.

6. When the sugar is completely melted into syrup, add the ribs and stir-fry evenly - do not turn on the fire at this time, use the residual heat to fry.

7. Add tomatoes, shredded ginger and garlic slices, stir-fry for 2 minutes

8. Add water to cover the ingredients, add 2 tablespoons of tomato sauce, bring to a boil and then turn to low heat, stew until the soup is thick, add salt to taste, add another 2 tablespoons of tomato sauce, a little sesame seeds, stir fry evenly, turn to high heat to collect the sauce, and serve

Tips

About saving. Boiling tomatoes is to make it easier to peel them, and the water used for boiling can be reused to blanch the ribs. The uneven parts of ginger are often cut off and thrown away, but they can be fully utilized when blanching meat to remove the fishy smell, so it won’t be a pity to throw them away after blanching.

Regarding safety. After rinsing the ribs, be sure to drain them (or use a paper towel to dry the water). When putting them into the pot to coat them with sugar, it is best to turn off the heat and use the residual heat to avoid oil or sugar splashing on the skin.

Regarding the taste. Tomato sauce must be added twice. The first addition before serving will make the taste richer, otherwise it will affect the taste of the finished product.
