Ingredients for minced meat and eggplant:

100g pork filling, 3 long eggplants, 4 cloves of garlic, 1 tsp (5g) chopped green onion, 2 tbsp (30ml) soy sauce, 1 tsp (5g) salt, 1 tbsp (15ml) Shaoxing wine, 2 star anise, 4 tsp (20g) sugar, 1 tbsp (15ml) oil, 1 tsp chopped green onion

Method of cooking minced meat and eggplant:

Slice the garlic. Wash the eggplant and cut it into dice, add salt, stir evenly and marinate for 10 minutes.

Heat the oil in a Teflon®-coated non-stick pan over medium heat. When the oil is 50% hot, add the eggplant cubes and fry until they are browned.

Leave some oil in a Teflon® coated non-stick pan. Heat it up and sauté star anise, garlic slices and chopped green onions. Then add the pork filling and stir-fry until cooked.

Then add the eggplant cubes, Shaoxing wine, soy sauce, sugar and a little water, cover and simmer over low heat for 10 minutes. Finally, sprinkle with chopped green onions.

A: When the pan is heated, add a little oil and crack the eggs in. When the eggs are semi-solidified, sprinkle a few drops of hot water around them and fry them over a low heat.
